Thai Red Curry
Ingredients
- 1/2 jar Red Curry Paste
- 1 400 ml Coconut Milk
- 1 270 ml Coconut Milk
- 2 chicken breasts - chopped
- 1 zucchini - sliced
- 1 tin baby corn
- 1 bunch broccolini - chopped
- 2 large chillies - diced
- basil
Method
- Cook zucchini, corn and broccolini in wok. Remove when done.
- Brown the chicken in wok and stir in curry paste.
- After a few minutes, stir thru the coconut milk.
- When chicken is cooked, stir thru the vegetables.
- Add the basil and chilli.
- Serve on a bed of rice.
Additional
You can try marinating the chicken in the curry paste for a richer flavour
